Philipponnat Perpetuelle Rsv Brut NV
Built in perfect balance between structure, fresh length on the palate, and vinosity, Réserve Perpétuelle Brut bears the hallmark of the great Pinot Noir terroirs surrounding Mareuil-sur-Ay. Thanks to its three to four years of aging on its lees in the bottle, this cuvée subtly combines freshness and roundness.

Winemaking
First pressing of grapes from the heart of Champagne, primarily Grand and Premier Cru Pinot Noir from the area around Mareuil-sur-Ay. Traditional vinification in vats and oak barrels, avoiding any premature oxidation; 27% of the 2021 vintage wines underwent no malolactic fermentation. Aged in casks to impart sublime depth and patina, our reserve wines are a treasure that the House re-blends and renews each year, incorporating them into the new harvest, adding complexity without altering its minerality. Moderate Brut dosage (8 g/l) to maintain the balance between freshness, fruitiness, and vinosity without masking the wine's character and purity.
Aging
Aged on lees in the cellars of the House, at a constant temperature of 12°C for three years, much longer than the legal minimum of fifteen months.
