
Cabernet Sauvignon, Texas Hill Country, Fovel Vineyard, 2019
Subtle forest-floor (dark alluvial soils) on the first impression that are clean and inviting. The nose is intriguing, makes you think about what Texas Hill Country cab is and can be. The wine is ripe, but not over-ripe. The aromas hint at young vines producing very high-quality fruit, and in our opinion a Hill Country Cabernet Sauvignon vineyard worth paying attention to. Aromatically the wine provides everything you want Cabernet to deliver from adolescent vines. On the palate the wine is broader and richer than what the alcohol content suggests. This is due to the phenolic ripeness occurring evenly across the growing season and ahead of sugar ripeness; the result being a lower alcohol wine with concentration of fruit. This is our 2nd experience working with Cabernet Sauvignon from Fovel Vineyard and each experience has produced a noteworthy and a customer/member favorite. This vintage of the Fovel Cabernet Sauvignon also constitutes 10% of the 2019 Ocotillo blend - a Super-Tuscan inspired wine.
